The Ultimate Chewy Oatmeal Scotchies: A Classic Butterscotch Cookie Guide

Oatmeal Scotchies Cookies

My mother always made us or favorite cookies for the holiday’s. Oatmeal Butterscotch cookies have always been one of my favorites.

I’ve been wanting to write this article for years. So here it is my friends. The recipe for Oatmeal Scotiches.

For those of you just joining me, my father worked for the Quaker Oat’s company for 33 years. During which time we received a bunch of company related items. The Quaker Oats Favorite Recipe Collection (Pantry Collection) pictured here is one of the items I’ve acquired and where this recipe comes from.

Here is how I make oatmeal scotchies cookies.

First, gather the ingredients.

Oatmeal Scotchies Cookies

Mix the following dry ingredients and set aside.

  • 1 1/4 cups all-purpose flower
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups Quaker Old Fashioned Oatmeal

Now lets start by mixing the butter and sugar.

  • 3/4 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 2 sticks unsalted butter

Then add the vanilla and mix.

1 teaspoon vanilla

Next add two eggs, and mix.

Add the Quaker Standard Oatmeal Old Fashioned – 18 oz and mix.

Add the dry ingredients that you set aside earlier and mix.

Add the Nestle Toll House Butterscotch Morsels, 11oz (Pack of 3)

Mix well until it looks something like this.

Spoon onto un-greased cookie sheet.

I recommend the OXO Good Grips Medium Cookie Scoop

Bake at 350 degrees for 7-10 minutes.

Let cool on the cookie sheet for 2 minutes before removing.

Serves: 3 dozen
Oatmeal Butterscotch Cookies
Ingredients
  • 1 cup (2) sticks unsalted butter
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups Quaker Oats Old Fashioned Oats
  • 2 cups butterscotch chips
Instructions
  1. Combine the flour, baking soda, salt and oats, mix well and set aside.
  2. Cream the butter and sugars.
  3. Add vanilla and eggs
  4. Slowing add in the dry ingredients while mixing.
  5. Add in the butterscotch chips
  6. Spoon onto cookie sheet and bake for 7-10 minutes on at 350 degrees.
  7. Let cool for two minutes before placing on cooking rack.
