How To Make Lemon Bars

I have had a number of request for Lemon Bars. I’m told the ones I make are really good. I have to be honest, this is a recipe I’ve taken from my mother’s archives. It is one of those recipes that were written down on a 3 x 5 index card many years ago. When I asked my mother for the recipe she had to dig through her box full of 3 x 5 cards.

My mother has been making these for years. Check out that nice worn card in the image, no doubt years of accumulated memories making these. It pleases me to know I have finally mastered the skill to create this popular treat.

Making Lemon Bars is a two-step process. First you make the crust and then you make the filling.

Let’s start with the crust.

First, gather the ingredients.

In a mixing bowl combine the following.

  • 1 cup of unsalted butter (2 sticks)
  • 1/2 cup of confectioner’s sugar (powered sugar)

Cream the butter and sugar.

Slowly add in the 2 cups of flour.

Mix until a dough forms. It will be crumbly and resemble something like this.

Transfer the dough to a 9 X 13 baking dish.

Using a spoon or a spatula press the dough into the pan as shown below.

Bake on 350 degrees for 20 minutes or until the edges start to brown slightly. Do not over bake, you will be cooking this again so if it isn’t quite brown that is ok.

Let cool for at least 30 minutes. If you are in a hurry, then place in your freezer or fridge to cool.

Now let’s work on the filling.

Gather the ingredients while you are waiting for the crust to cool.

  • 2 medium lemons
  • 4 eggs
  • 2 cups granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon flour
  • 6 tablespoons lemon juice (fresh lemon juice)

Juice two regular sized lemons. I prefer to use fresh lemons for my recipe. I think it makes a difference verses using the lemon juice in a container. I also include the pulp which adds that extra, ooo, aaa! (think monkey sounds) that’s the secret to great Lemon Bars.

Grab 4 eggs and add them to the mixing bowl.

Scramble the eggs while adding the two cups of sugar.

Add 1 teaspoon of salt.

Lemon Bar Recipe

Add 1 teaspoon of flour.

Lemon Bar Recipe

Add 6 tablespoons of fresh lemon juice.

Lemon Bar Recipe

Mix this until it resembles vanilla pudding.

Lemon Bar Recipe

Pour the filling over your cooled crust.

Bake on 350 degrees for 30 minutes or until the top starts to brown.

Let cool completely and sprinkle with powered sugar. If you don’t let this cool then the powered sugar will just melt into the filling.

Cut bars into desired sizes. For me this is about the size of a brownie.

Ingredients
  • Ingredients for the crust
  • 1 cup of butter (2 sticks)
  • 2 cups flour
  • 1/2 powered sugar
  • Ingredients for the filling
  • 4 eggs
  • 1/2 teaspoon salt
  • 2 cups sugar
  • 6 tablespoons fresh lemon juice
  • 4 tablespoons flour
  • 1 teaspoon baking powder
Instructions
  1. Directions for the crust
  2. Cream the butter and sugar
  3. Blend in the flour
  4. Pat into a 9 x 13 glass baking dish
  5. Bake on 350 degrees for 20 minutes
  6. Directions for the filling
  7. Beat the eggs
  8. Add in the sugar
  9. Add the fresh lemon juice
  10. Add the salt, continue beating until light and fluffy
  11. Add in the baking powder and flour
  12. Pour filling over the cooled crust
  13. Bake on 350 degrees for 30 minutes or lightly browned.
  14. Let cool for at least an hour.
  15. Sprinkle with powdered sugar
